So my question is this

 

I have friends who are coming for dinner - and I usually do dumplings with pork mince, however she does not eat pork.  I posted this picture on facebook earlier today, and she asked for the recipe which is :

* 100 grams pork mince
* 3 spring onions 
* 1 clove of garlic crushed finely 
* 1 tsp of fresh ginger 
* 1 tsp of raw sugar 
* a splash of soy sauce - I used premium grade

Variations to this you can add waterchestnuts just two and you can also add sliced prawns into the pork mince. It is really a versatile recipe. 

You lay out four skins so that overlap just a little. 

You then put like a teaspoon of mixture in each skin. You put a little bit of water around the outer edge of each skin and you fold in half from back to front). Then you roll from left to right or right to left and end up with the little flowers. 

You then steam them in boiling water - I did these in the frying pan with boiling water for 30 minutes - the next time I will put a piece of cooking paper on the bottom for ease of removal - but you could use a chinese steamer. As the dumplings are cooking half way through you put a splash of sesame oil over the top of each dumpling. 

I served with soy sauce - but you could use a chilli and garlic sauce.   As this was only an entree two each was more than enough.

If you use turkey mince would this recipe work and what about the flavor combinations - Any suggestions would be warmly received.
